  1. Bring water to the boil in your kettle. Pour 1/2 a cup of boiled water into a cup and pop in the tea bag. Steep for 5 minutes.
  2. While the tea is steeping, measure 5 tablespoons of water into a small bowl. Sprinkle over gelatin and leave to bloom.
  3. When tea is ready, remove teabag and discard. Pour tea into a medium saucepan. Whisk in ginger, cinnamon, vanilla powder, cloves and honey.
  4. Over a low heat, add coconut milk and let flavors meld for a further 5 minutes.
  5. Turning off the element, remove mixture from the heat and whisk in bloomed gelatin, taking care to ensure the mixture is lump free.
  6. Pour into molds (or into a glass/ceramic dish for cutting into portions when set). Pop into the fridge until set, approximately 3 hours.
