Beet & Bison Meatballs

Exciting times here in the Midwest our friends over at KC Natural have launched a new range of AIP compliant sauces make our lives a little easier! KC Natural are a Kansas City based company who first brought us nightshade free BBQ sauce and now bring us Nomato Pasta Sauce and Nomato Ketchup. When I received my jar of KC Naturals Nomato Sauce I simply had a craving for meatballs, served over garlic infused zoodles. I hunted through my freezer and low and behold I came across a long lost package of Ground Bison Meat! Combined with my overarching need to hide veggies in anything we eat to ensure my daughter gets the nutrient density she needs  and my beet & bison meatballs were born!

I am a real fan of bison, like all meat, it’s rich in protein, iron, zinc, vitamin B12 and other nutrients, if you can’t access bison then switch out either Ground beef or ground kangaroo (if you are down under).

Instructions
  1. In a large bowl place all ingredients EXCEPT Avocado/Olive Oil & Broccoli, mix ingredients up with hands or fork, ensuring that all ingredients are distributed throughly
  2. Portion mixture into 2tbsp measurements and roll into meatballs
  3. Place Avocado / Olive Oil into an iron skillet or 1" deep frying pan, after 1 minute, pace meatballs in pan not touching each other and with sufficient space to use tongs to turn them over.
  4. Brown for 1 minute each side of meatball until evenly brown
  5. Cut up Broccoli into small florets/trees, add into pan
  6. Add half jar of KC Natural Nomato Sauce and leave to simmer for 5 minutes if you are not able to source KC Naturals Nomato Pasta Sauce you can make your own or make your own http://www.joannafrankham.com/tomato-passata-replacement-aip-friendly/
  7. Serve

    I’m going to try these with kangaroo meat, as bison is unavailable here in Australia. I imagine the nutritional profiles would be similar.
